Maybe a professional cook would do them on a different way Vigyor, but I do not care.


I. Simple sauces for pasta


All these recipes would start with "put some water to boil".  This means that cooking the pasta takes longer time than  make the sauce.  These are very simple recipes, beginners can also try and those who do not like to spend too much time in the kitchen.


1) Salmon with creme fraiche

Ingredients:

Salmon (100-150 g per person)

1-2 segments of garlic (depending on taste)

a table spoon of vegetable oil

100 g creme fraiche or sour cream (per person)

salt, pepper depending on your taste

Directions:

1. Heat up the oil in a pan and cut the salmon and the garlic into small cubes.

2. When the oil is hot enough put the salmon in it, let it fried a bit (stir it).  Add salt and pepper as much as you like 

3. After 2-3 minutes of frying you can add the garlic. 

4. After another 2-3 minutes you can add the creme fraiche.  You should not cook it too long then, let the whole sauce boil once and it is ready.


2) Tuna sauce

Ingredients (for 2 persons):

1 can (130g) of tuna in brine, not in oil

1 middle sized onion

1-2 table spoons of vegetable oil

150 g creme fraiche or sour cream

salt and pepper


Directions:

1. Heat up the oil in a pan and slice up the onion.

2. When the oil is hot enough put the onion slices in it with some salt and fry it until it gets "glassy".

3. Get rid of the water on the tuna (filter it Vigyor) and add it to the onion. Add some pepper and stir it.

4. After 3-2 minutes add the cream and boil it for a second, then it is ready.


3) Mushroom sauce

Ingredients (for 2 persons):

250 g of mushrooms; it can be any kind, I prefer oyster mushroom, but I think one can use any kind which is eatable

1 middle sized onion

1-2 table spoons of vegetable oil

150 g creme fraiche or sour cream

1-2 segments of garlic

salt, pepper, paprika powder (if you wish)


Directions:

1. Heat up the oil in a pan and slice up the onion and the mushrooms.

2. When the oil is hot enough put the onion slices in it with some salt and fry it until it gets "glassy".

3. If you want to do it with paprika powder, you have to add it (1-2 tea spoons) at this point.  Stir it quickly and then add a little bit of water, in order to avoid the burning of the paprika.

4. When it is boiling you can add the mushrooms and the pressed garlic.  Cover it for 2-3 minutes.  Mushrooms will release some water. 

5. After a few minutes you can remove the cover and let the water evaporate. Add the creme fraiche or sour cream, boil it for a second and you are ready.


You can make it without paprika powder either.  It is also very good like that.


4) Pea stew

Ingredients (for 2 persons)

250 g of peas

1 middle sized onion

1-2 table spoons of vegetable oil

1-2 segments of garlic

1 middle sized tomato

salt, pepper, paprika powder (if you wish)


Directions:

1. Heat up the oil in a pan and slice up the onion into small cubes.

2. When the oil is hot enough put the onion in it with some salt and fry it until it gets "glassy".

3. Add 1-2 tea spoons of paprika powder at this point.  Stir it quickly and then add a little bit of water, in order to avoid the burning of the paprika.

4. When it is boiling you can add the peas, the pressed garlic, the tomato and some water that covers the peas. Cover the pan and cook, until it gets soft. Then it is ready.


5) Tomato sauce with minced meat

Ingredients (for 2 persons)

150 g of minced meat; it can be any kind of meat, I generally use beef

1 middle sized onion

1-2 table spoons of vegetable oil

1-2 segments of garlic

1 can of concentrated tomato paste (80 - 100 g)

salt, pepper, pizza spices


Directions:

1. Heat up the oil in a pan and slice up the onion into small cubes.

2. When the oil is hot enough put the onion in it with some salt and fry it until it gets "glassy".

3. Add the meat with pizza spices, pepper and pressed garlic and fry it until the meat "whitens".

4. Add the tomato paste and a glass of water, cover the pan and cook it for a few minutes. Stir it a few times.
